Light and fluffy American style pancakes with a hint of spice. The frosting is optional, drizzle whatever takes your fancy over them!
Ingredients:
125g plain flour
1 teaspoon baking powder
1 - 2 teaspoons of either Artisan Pumpkin Spice or Artisan Winter Spice
3 eggs - separated
235ml milk
Dash of vanilla essence
Knob of butter - for the pan
Frosting:
2 tbsp cream cheese
1 tbsp double cream
1 tbsp butter
2 tbsp mascapone
1 tsp Artisan Spice Blend of your choice
Method:
Mix the flour with the baking powder and Artisan Spice Blend of your choice.
Separate the eggs and beat the egg whites until firm. Mix the yolks with the egg yolks and the vanilla essence. Mix in the flour.
Fold 1/3 of the egg whites into the batter then gently fold in the rest of the whites.
Heat a frying pan and add a knob of butter. I like making little pancakes! Cook for around 1 minute until cooked then flip over.
For the frosting I added 2 tablespoons of cream cheese, 1 tablespoon of double cream, 1 very soft tablespoon of butter, 2 tablespoons of mascarpone, 3 tablespoons of caster sugar and 1 teaspoon of Artisan Pumpkin Spice or Artisan Winter Spice.
