Super easy breakfast recipe! This is delicious on top of greek yoghurt.
You could add dried fruit as well!
Ingredients:
Tbsp coconut oil
Tsp Pumpkin Spice
Handful of brazil nuts, almonds, cashew nuts, seeds, desiccated coconut
Dash of sweetener
Method:
Oven on at 160C fan. Melt a tablespoon of coconut oil in large frying pan and add a teaspoon of Pumpkin Spice. Next add a handful of each of the nuts you want to use. Bash them up first with a rolling pin or use a food processor. I used brazil nuts, almonds, cashew nuts, seeds, desiccated coconut and sweetener.
Make sure to coat all of the mixture. Get two oven trays and line with parchment paper. Divide the mixture between both, Make it a little uneven so you get the crunch and clusters.
Pop into the oven for 25 to 30 minutes, take out and leave to cool then transfer to an airtight container.
Nibble away!
