So easy to make this classic cake with a decadent twist, a perfect crowd pleaser for all occasions.
Ingredients:
200 g margarine or butter
175 g caster sugar
1 tsp vanilla extract (I used 2)
3 medium eggs
200 g self raising flour
1 tsp Pumpkin Spice
Method:
Usually made in a rectangular tray but you can use any shape. Line it with baking paper.
Pre-heat your oven to 150 degrees fan.
Cream the butter and sugar for a good 7-10 mins until light in colour and fluffy.
Add the eggs until fully mixed in then the vanilla then stir the flour and Pumpkin Spice.
Bake for 25-30 mins. Until a toothpick comes out clean
When the cake has cooled you can use the traditional icing sugar mixed with a little water and sprinkles on top but I felt like something a little different.
Get a tub of ready made frosting and whip it up with an electric mixer until it doubles in size. Cover the cake with frosting then add sprinkles. You can even add half a teaspoon of Pumpkin Spice in the frosting aswell!
